A simple but fancy Indian spiced version of a classic breakfast favourite that comes together in just 15 minutes and with ingredients that you probably already have lying around.

Ingredients
100mlfull-fat cow's milk
2large eggs
2tspsugar
1.5tspground ginger
1tspground cardamom
1tspground cinnamon
0.5tspground cloves(optional)
150gbrioche bread(about 8 small slices'worth)
2tspavocado oilfor frying
powdered sugar, fruit and maple syrup to serve
Instructions
Slice your bread of choice about three-quarters of an inch thick. I ended up with 8 small slices of bread.
In a large flat bowl, whisk together the milk, eggs, sugar and chai spices until combined and no lumps remain.
Heat a frying pan on medium-high heat with the avocado oil until the oil is heated through. Soak your slices of bread in the milk and eggs mixture for about 10-15 seconds on each side.
Carefully remove the slices from the bowl and place in the pan to fry. Leave them to sit for 6 minutes before flipping. The fried side should be toasted and dark from the sugar caramelising. Cook for 5 minutes on the other side before removing from the pan and serving.
Top with fresh fruit, powdered sugar and maple syrup.
