How to Make a Tofu Teriyaki Bento Box

Step 1: Cook the Rice

Rinse the rice under cold water until the water runs clear. Cook it in a rice cooker or on the stovetop. Once cooked, fluff the rice and season it with furikake.

Step 2: Prepare the Spicy Cucumber Salad & Sugar Snaps

Slice the cucumber thinly, toss with salt, and let sit for 5–10 minutes. Drain any excess water, then dress with sesame oil, rice vinegar, soy sauce, and a sprinkle of shichimi togarashi. Chill until ready to assemble.

For the sugar snaps, bring a small pot of salted water to a boil. Blanch the sugar snap peas for about 1–2 minutes until bright green, then transfer to ice water to keep them crisp.

Combine the salted cucumber with the dressing

Step 3: Cook the Tofu

Press tofu to remove excess water, slice, and dust lightly with cornstarch. Pan-fry in a little oil until golden and crisp. Add soy sauce, mirin, sake (or substitute), and sugar to the pan; simmer until thickened, tossing tofu to coat.

Step 4: Assemble Your Tofu Teriyaki Bento Box

In each bento box:

  • Add a layer of furikake-topped rice.
  • Arrange the teriyaki tofu pieces neatly over the rice.
  • On one side, add the spicy cucumber salad.
  • In another side compartment, add sugar snap peas and cherry tomatoes.

Finish with an extra sprinkle of sesame seeds or shichimi togarashi if you like!
